Hummus

INGREDIENTS

  • 150g chickpeas
  • 6 jalapenos
  • Tahini paste
  • good greek oil
  • Cumin
  • Corriander
  • White pepper
  • black pepper
  • cayanne pepper
  • salt
  • Parsley

INSTRUCTIONS

  • Simmer Chickpeas for 40 minutes
  • Drain 50% of the water
  • Cool just a little bit
  • Add Garlic, Tahini, Jalapenos, and spices to processor
  • Add the chickpeas on top, process
  • Sprinkle parsley on top.

Indian Black Bean Curry

INGREDIENTS

  • 4 large onion, finely chopped
  • 6 large garlic cloves, crushed
  • 5 medium tomatoes (350 grams), seeded and finely chopped
  • 2 sweet potatos
  • 1 Corn
  • Ghee
  • 2 teaspoon cumin seeds
  • 4 teaspoon coriander seeds
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon garam masala
  • ½ teaspoon turmeric
  • 600g canned black beans
  • Salt to taste
  • 500g coconut cream
  • 1.5 teaspoons methi leaves
  • 20 curry leaves
  • Parsley
  • 1 Greek Yohurt (Naan)

Black Bean Dip

Ingredients

  • 3 onions
  • ½ teaspoon salt
  • 1½ teaspoons ground garlic
  • 3 bay leaves
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1½ teaspoons smoked paprika
  • 2 teaspoons oregano
  • ½ teaspoon black or white ground pepper
  • 2⅔ cups of canned black beans (6-8 cups cooked)

Instructions

  1. Dice and fry onions
  2. Add seasoning and fry for another 2 minutes
  3. Add beans and water
  4. Boil and then simmer for 15 minutes
  5. Remove the Bay leaves!

Caramel Cookies

Makes 24 Cookies

INGREDIENTS

  • Cookies
    • 2/3 cup brown sugar (do not reduce the sugar under any circumstances)
    • 175g butter (> 1 stick, 113g = 1 stick) Softened (room temperature)
    • 1 egg
    • 2 cup flour
    • 2 cup of nuts or chocolate chips (200g)

(Note for Ro: 2ggs, 2.25 flour 150g buffer, 1/2 cup sugar)

  • Caramel
    • 100g Condensed Milk
    • 50g Brown Sugar
    • 25g Butter
    • 10g golden syrup or light corn syrup
    • 1/4 tsp vanilla extract

INSTRUCTIONS

Caramel

  1. Mix everything except the vanilla extract in a pan in low medium heat until melted together, and then boiling
  2. Chill caramel for 2 hours until completely set
  3. Then cut into pieces

Cookies

  1. sugar and butter, then egg, then flour
  2. Do the flour all at once and do not mix fast
  3. Make balls with caramel in the middle, flatten
  4. Put in Freezer for at least 4 hours
  5. Flatten even more
  6. Cook at 163C (325F) for 16min until they brown on top

Sticky Date Cake (aka Sticky Toffee Pudding)

INGREDIENTS

  • 400g Dates
  • 200ml Water
  • 75g Softened Butter
  • 50g Dark Sugar
  • 2 Tbsp Honey
  • 2 Eggs
  • 150g Flour
  • 1 tsp Baking Soda
  • 2 tsp baking powder
  • 9×9 Pan
  • 125ml Heavy Cream

INSTRUCTIONS

  1. Mush Dates then steep in 200ml Water for 30 minutes
  2. Leave Butter out to become soft
  3. Whip butter into brown sugar
  4. Add one egg at a time
  5. Add Honey
  6. Mix in all the dry ingredients + Dates
  7. Poor into a 9×9 Pan
  8. 180C 20-35 minutes depending on dryness

Caramel Sauce

  1. 70g Granulated Sugar + speck of water
  2. Heat to setting 7, the sugar will melt if it bubbles, remove the heat
  3. Once it is all melted start adding the heavy cream

Banana Bread Cake

INGREDIENTS

  • 215g flour
  • 1tsp salt
  • 1tsp baking powder
  • 1tsp baking soda
  • 3 bananas
  • 113g butter (1/2 cup)
  • 1.5 cups chocolate chips
  • 100g sugar
  • 50g brown sugar
  • 2 eggs
  • 1tsp vanilla extract

INSTRUCTIONS

  • To ripen the banana – bake bananas at 350 for ~10 mins.. mash and set aside
  • flour, salt, baking powder, baking soda.. whisk and set aside
  • Start creaming room temp butter, mix in white sugar and brown sugar, eggs, vanilla extract, mix in mashed bananas, mix flour and choc chips
  • Put in at 350 for little less than hour.. check at 50 to see how it is

  • 4 skinless, boneless chicken breast halves

  • Breadcumbs with parmesan cheese
  • Rest before frying for 15 minutes
  • deep frying 2 minutes per side
  • Stick in oven for 20 minutes
