Berry Compote Pancakes

INGREDIENTS

Makes: 4 Pancakes

Pancakes:

  • 1 1/2 cups of flower
  • 3 tablespoons of brown sugar
  • 1 teaspoon of baking powder
  • 1 cup milk
  • 2 eggs
  • 4 tablespoons of melted butter (let it warm on the counter)

Compote:

  • 1 cup of raspberries and blueberries
  • 1/8 of Dark corn syrup

INSTRUCTIONS

  1. simmer the berries, water and corn syrup in a pot for 25 minutes (medium)
  2. whisk the wet ingredients
  3. whisk the dry ingredients
  4. combine wet and dry and whisk until airy
  5. cook on medium (to medium high) and flip
